Creme brulee / Crema de zahar ars


Ingredients:


  • 8 eggsvanilie
  • 8 tablespoons sugar and another 4 or 5 for caramelizing
  • 1 vanilla extract
  • 1/2 zest from an orange
  • 1/2 zest from a lemon
  • 1-2 cups of milk
Steps:
In a medium saucepan put 3-4 tablespoons of sugar. Put the pot on the stove. Stir until the sugar becomes soft and brown.
Remove from the fire. Put the caramelized sugar on the walls of the saucepan, rotating (use oven gloves). Put aside to cool.
In a large bowl break the eggs and add 8 tablespoons of sugar, vanilla, orange and lemon zest.
Mix well with an whisk.
Put the milk in a small pot and warm it until you can put your finger in it and does not burn.
Add the milk to the eggs composition little by little and mix well (with a whisk).
Pour the mix into the saucepan. The mix must stand bellow the caramelized sugar put on the walls.
In preheated oven put a tray with water. Put inside the saucepan.
Bake at low heat until curdle. Use a straw to try if it is baked. If the straw is empty it is baked.
Caution: not to boil the water. Add extra if needed.
You can serve in bowls, plain or with whipped cream

Ingrediente:
  • 8 oua
  • 8 linguri zahar si inca 4-5 linguri pentru zahar ars
  • 1 esenta de vanilie
  • coaja de la 1/2 portocala
  • coaja de la 1/2 lamaie
  • 1-2 cani de lapte
Pasi:
Intr-o oala medie se pun cele 3-4 linguri de zahar pe foc si se amesteca pana devine moale si brun. Se ia de pe foc si tapeteaza cu zaharul ars peretii acesteia (folositi manusi de bucatarie). Se pune la racit.
Intr-un castron mare se sparg ouale intregi si se adauga cele 8 linguri de zahar, esenta de vanilie, coaja de portocala si cea de lamaie. Se amesteca bine cu telul.
Intr-un ibric se incalzeste laptele atat cat poti baga degetul in el fara sa te friga.
Se adauga la compozitia cu oua putin cate putin si se amesteca bine cu telul.
Continutul rezultat se toarna in cratita racita fara sa treaca peste nivelul zaharului ars.
In cuptorul preincalzit se pune o tava cu apa in care aseaza cratita. Se coace la foc mic pana cand compozitia se incheaga. Folositi un pai pentru a incerca daca s-a copt. Daca pe pai nu ramane compozitie, crema este gata.
Aveti grija ca apa din tava sa nu fiarba si sa nu se evapore. Adaugati, la nevoie, putina apa.
Se poate servii in castronele, simpla sau cu frisca.
