Bird's milk / Lapte de pasare

Ingredients:


  • 1 litre of milk
  • 5 large eggs
  • 200g sugar
  • 2 sachets vanilla sugar
  • vanilla essence
  • 2 tablespoons cornstarch
  • a pinch of salt

Steps:

Separate the egg yolks from egg whites.
Beat the egg whites until stiff. Add 100 grams of sugar.
Boil the milk with 100 g sugar, vanilla sugar and vanilla essence (to taste).
When boils, take a spoon full of egg whites and put it in milk. Boil the dumpling two minutes on one side and two on the other.
Remove from milk and place it in a bowl. Repeat procedure.
Mix cornstarch with the egg yolks, a pinch of salt and add slowly, two-three tablespoons of milk into the yolks.
Pour mixture into the milk. Put back on fire. Stir continuously until it thickens. No need to boil.
Put the composition in the bowl.
Decorate with cherry jam or cherry, strawberry, blackberry etc fresh.



Ingrediente:


  • 1 litru lapte
  • 5 oua mari
  • 200 gr zahar
  • 2 plicuri zahar vanilat
  • esenta de vanilie
  • 2 linguri amidon de porumb
  • un praf de sare


Pasi:

Separati albusurile de galbenusuri.
Se bat albusurile cu 100 de gr de zahar pana spuma devine tare.
Se pune laptele la fiert cu 100 gr zahar, zaharul vanilat si esenta de vanilie dupa gust.
Cand laptele fierbe se ia albus cu o lingura si se pune in lapte. Se fierbe galusca de albus doua minute pe o parte si inca doua pe cealalta parte.
Se scote din lapte si se pune intr-un castron. Se repeta procedura. 
Se amesteca galbenusurile cu amidonul de porumb, un praf de sare si se adauga, incet, doua-trei linguri de lapte in galbenusuri. 
Se toarna compozitia cu galbenusuri in lapte si se pune din nou pe foc. Se amesteca continuu pana aceasta se ingroasa. Nu trebuie sa fiarba.
Compozitia obtinuta se toarna in castronul in care s-au pus galustile de albus.
Se poate orna cu dulceata de visine sau cu visine, capsuni, mure etc proaspete.
