Ingredients:
- 2 courgettes (zucchini)
- 2 red bell peppers
- 1 green bell pepper
- 2-3 medium onions
- 1 large mushroom
- 1/2 litre of tomato juice
- 3-4 cloves garlic
- 2-3 tablespoons sunflower oil
- salt to taste
Steps:
Gratin the vegetables. Coat them with sunflower oil on both sides ( while gratin).
Mash them in a blender.
Mixed the vegetables in a pot, add oil, garlic, salt and tomato juice. Simmer 30-45 minutes.
